BEEF OFFAL – WHERE VIETNAMESE AND CHINESE CUISINES MEET

Phá lấu (beef offal) is a name originating from Teochew (China) dialect, referring to a signature dish they brought along with their immigration to Vietnam. “Lấu” here means seasoning “pha” with spicy spices to reduce its unpleasant smell.

The main ingredient in this dish is beef or pork offal (tripes, reed tripe, lungs, etc.), which is stewed in a liquid containing spices (five-spice powder, star anise, fennel seeds, etc.) and served with baguettes, coriander and mixed sauce.
