PORK LARDS STIR-FRIED IN FISH SAUCE

Pork fat is cleaned and diced, then fried in middle heat to get the fat’s oil out and produce crispy lards. The lards are then stir-fried with crispy onions, spices and fish sauce.

This dish is served with boiled vegetables and rice. In casual lingo, it is a “bao cơm” (ensuring full consumption) dish.
